In 1953, when Bertrand Drive was a gravel road, Edith and Russell opened Southside Bakery. Edith was a cake decorator and enjoyed talking to her customers. She was a true servant to the people. She always found time to help her family, friends and customers. It was all about helping everyone that needed help. Edith always had a smile on her face and never complained about anything. With her rosary and her smile, she really was a believer in the Prayer of St. Francis. She will be missed by everyone that knew her. And as my mother would say, '' Enough said about me.'' She is survived by her sons Samuel P. Guilbeaux and his wife Gerry Landry Guilbeaux, Russell James Guilbeaux and his wife Carolyn B. Guilbeaux; six grandchildren, Tammie G. Simon, Samara G. Curtis and her husband Randy, Penny G. Ayo and her husband David, Billy J. Guilbeaux and his wife Leslie G. Guilbeaux, Denny P. Guilbeaux and James Bean Guilbeaux; five great-children, Lauren Simon, Skylar, Janie, Ashley and Charles Curtis and one sister, Lillian L. LeBlanc. She was preceded in death by her husband, Armand Russell Guilbeaux, her father, Elie LeBlanc, her mother, Henrietta Bernard LeBlanc; two brothers, Buke LeBlanc and Abel LeBlanc, and one sister, Leonie L. Blanchet.
